For the last few years, when I’ve baked my Christmas cakes (around September) I’ve also made my own mincemeat. For home and for the Christmas fair at Church. This year I didn’t. I don’t really know why…. I just didn’t! But I’ve just come across a tweet by Whitworths with a recipe, and I’ve got the urge! There’s something gratifying and satisfying (yes, I’m a poet too) about homemade, and although I’m usually all about trying unbranded foodstuffs whenever possible, there’s something special about Whitworths super juicy fruits that I can’t resist π That’s right, I’m fruitist lol π
The only thing I would change about the recipe and this is just my personal taste, is I would add cranberries (or substitute some of the other fruits) I love cranberries! And even though fresh cranberries are in the supermarket now, I still prefer to use the dried ones. Now I say dried, but they’re really not! They’re plump and gorgeous π I use them in my cakes (and their soft apricots) mincemeat, and even stuffing since I found a recipe for chestnut and cranberry stuffing a few years ago. (I really don’t like the taste of sage!)
I think I’m going to have to put my money where my mouth is and whip up a batch after all! I’m practically salivating at the thought of a freshly baked mince pie now π
Right, that’s decided then, tomorrow’s task! Ooh, and I’ll tell you all about what I did with a rather large pumpkin tomorrow too! (Behave!)
Right, I’m off to bed to dream of Christmas goodies….if I can stop my tummy rumbling!
Sleep well, and stay safe and healthy
