Lemon Drizzle Cake
Method 1: Use Vanilla Cake Recipe but substitute the caster sugar for S&C lemon drizzle flavour icing sugar and add the zest of a lemon. Reserve the juice to make your drizzle. Bake in a loaf tin or traybake.
Method 2: Use Vanilla Cake Recipe and add the zest of 2 lemons and the juice of one. Reserve the juice from the other lemon for the drizzle.
For the drizzle: Add 50g granulated sugar to your reserved juice. Poke holes in the top of the cake, and pour over while still slightly warm. The juice will sink in and the sugar will form a crusty top
